Hello, Melissa here! Please say hello to my new cookbook… FEEL GOOD :  100 quick and easy recipes to bring a bit of comfort and joy into our kitchens and beyond. Coming 2nd June 2022! FEEL GOOD  is all about exploring how food and cooking makes us feel. Comforted, connected, energised, calmer, grounded, satisfied and soothed and more. In anticipation of National BBQ Week, which starts in just over a week’s time on the 25th of May, and in a bid to spend as much time outside as possible, here are some of my favourite recipes for a barbecue party — whether for one person, 2 or more! Even if you’re just cooking up these recipes using an oven grill, griddle or regular pan, I’m sure you’ll agree that summer vibes are always welcome. BBQ Basted Veggies With Almond Aioli A recipe that can easily be made vegan by substituting your fav cooking oil for the ghee, and that works with whatever veggies need using up in the fridge. The situation we’re in is mixed across the board — some are finding it easier than others, but focusing on the silver linings and finding the opportunities (or even gifts!) is something we all need to focus on. Staying home is a wonderful opportunity for us to learn about ourselves and our communities — here are five ways to make your journey a little smoother. 1. Find Work-Life Balance Where you used to have your commute, your afterwork plans, even picking up the kids from school to differentiate the work day from the rest of your life, you now have… well, not much to draw the line. Beetroot Quinoa Risotto

How To: 1. Ideally soak the quinoa overnight or for 8 hours in double the volume of filtered water with a pinch of salt. Drain and rinse thoroughly before cooking 2. Preheat oven to 200˚C/180˚C fan assisted/gas mark 5. Wash and quarter the beetroot. Roast for 30 – 40 mins until tender (we use a knife and fork to handle the beetroot to avoid pink fingers or wash your hands immediately to avoid a pink stain!) 3. Meanwhile, peel & finely dice the onion(s). Peel & finely chop, grate or crush 1 large or 2 smaller garlic cloves. Wash the thyme, pick the leaves off the stalks 4. Wash the celery. Finely dice it. Heat the butter in a pan over a medium heat. Add the onions and fry until softened for 8 mins, stirring occasionally 5. Add the garlic, thyme and celery to the pan. Fry for 30 secs. Add the quinoa. Squeeze in the juice from ½ the lemon. Add 600ml of water. Turn up the heat to bring to the boil, then turn down to a medium simmer. Leave to cook for 12 -15 mins until the quin...
