    Hello, Melissa here, sharing 10 of my absolute favourite Springtime recipes to enjoy over the long weekend or whenever you please.  I’ve picked these out especially as they are all simple, cheerful and based on easy to get ingredients like seasonal veg, popular cupboard items and frozen produce too.     1. Chocolate Clusters Totally flexible chocolate bites – inspired by the rice krispie clusters that my Mum never let me have! Use whatever you have to hand in your cupboards; coconut flakes / seeds / chopped nuts work really well too. And look out for fairtrade chocolate. Get the recipe.     2. Asparagus Tray Bake This one pan tray bake makes use of frozen peas, broad beans or edamame if you have it in your freezer and if you can’t get asparagus yet, swap for broccoli of any kind or greens you already have. Jasmine’s 5 Hot Weather Refreshers

The weather may be changeable, but there have been an awful lot of very hot days around these parts lately. On a scorching day when I’m just looking to cool down, these recipes are some of my sweet pick-me-ups for keeping cool and calm.

Fennel, Grape & Mint Refresher

This is a beautifully fragrant and refreshing alternative to a summer Pimm’s, especially since alcohol is dehydrating. You just need a blender and a sieve for this one.

Frozen Grapes

The easiest recipe ever, frozen grapes are exactly what they sound like, and they are a taste sensation. You’ll wonder why you’d never frozen your bunch of grapes before.

Tamarind Juice

Ditch the cola for this sweet tangy nectar that I first tasted on my travels to Zanzibar a couple years ago. It’s made using dried tamarind pulp or fresh tamarind if you can get your hands on it.

Mango Lassi Mousse

If your sweet tooth is calling, this mango lassi mousse is just the thing. It’s light, airy and super summery, and can be made with coconut yoghurt for that piña colada vibe.

Coconut, Lime & Mint Ladoo

An easy, delicious and nutritious snack that you can make with the whole family. These Indian-inspired nut ball is super cooling for summer thanks to the coconut, lime and mint.
