Buckwheat Blinis with Beetroot Tahini

As always, the season inspires what I want to eat, so beetroot plays a starring role in these miniature pancakes which you can prep in advance and leave to chill in the fridge until you’re ready to serve.

These chocolate & pistachio dipped apples are SO easy and hit the spot when you need something a little sweet after a meal or for a snack. They’re good fun to get kids involved with and a great way to use up apples.

Fruity Chocolate Dippers

These easy little guys hit the spot every time. Simply melt your favourite fair trade chocolate, dip in segments of satsuma or clementine then sprinkle a tiny little bit of sea salt on top & a few chopped pistachios or nuts or seeds if you’re feeling fancy. Chill in the fridge/freezer until set, et voila!

No party is complete without my Happiness Balls! So easy to make and great to get kids involved too. I also love making these and gifting them to friends and family. Roll them in anything you have at home that might need using up or get creative.

Chocolate Coconut Clusters


My *Chocolate Coconut Clusters* from my cookbook ‘Eat Happy’ are perfect to make with kids… be big or little! These quick little clusters are just four ingredients and are deliciously moreish. Make them bitesize for a show stopping canape. They can be kept in the fridge and enjoyed throughout the week so you always have a little chocolate love to hand. Look out for fairtrade chocolate too!
