Melissa’s Soup Toppings you’ll love

Image
As a self-confessed soup lover, I am always looking for ways to add extra flavour, crunch and excitement to my soup. So here are 5 ways you can spruce up yours: 1. Halloumi Croutons:   not technically “croutons” as there’s no bread involved but these are delicious cubes of crispy fried halloumi. Simply chop, fry in a little butter or oil & cook to your desired crispiness.  Get the recipe. 2. Make a fridge raid herby drizzle:  Whizz up any herbs or left over salad leaves you’ve got that need some love with some olive oil, vinegar or lemon juice & a little salt in a blender & drizzle on.  Try this recipe. 3. Roast some veggies:  Depending on what soup you’re making, you might like to roast a little of what you’re using for ultimate texture & flavour on top. I love roasting kale or any discarded cauliflower leaves for extra crunch.  Try this. 4. A drizzle of olive oil/yoghurt/kefir:  I love adding extra swirls to my soups and particularly

Jasmine’s 5 Valentine’s Day Bakes You’ll Love

If there was ever a brilliant excuse to do something a little special in lockdown, it has to be Valentine’s Day. Whether you’re baking for your sweetheart at home or want to deliver a lovely treat to your nearest and dearest, I’ve rounded up some ideas to brighten up your weekend.

Lemon Basil Almond Drizzle Cake

This cake is a firm favourite from East by West (page 95). This is a lighter take on a classic lemon drizzle, with a beautiful freshness from the basil. It’s made using a base of ground almonds and tapioca.

Chocolate Raspberry Muffin Volcanoes

The ultimate Valentine’s Day recipe, these muffin volcanoes are ooey-gooey and oh so delicious. They are not too sweet but just sweet enough thanks to sticky jam and dark chocolate. I make these using a gluten-free flour mix.

Blackberry Apple Ginger Buckwheat Cake

A mouthwatering cake that’s vegan and gluten-free — what more could you ask for? Delicious for a special breakfast hot out the oven or an afternoon tea, I love the tangy fruit paired with fresh ginger, and your loved ones will too.

Choc-Carob Love Cake

If you haven’t tried carob yet, this is your chance. Not only is it delicious in its own right, but it’s also a wonderful alternative to chocolate, which can be quite high in caffeine. This is a grown-up cake that’s complex thanks to the molasses and sesame oil, and just sweet enough.

Rose and Cardamom Gram Flour Bites (Ladoos)

Ladoos are a traditional Indian snack that’s perfect for packing up in a nice box and gifting. These no-bake rose and cardamom ones, made with toasted gram flour (chickpea), are super fragrant and absolutely delicious — think melt-in-the-mouth shortbread with a twist.
